Varan Bhaat

Varan Bhaat is a simple but an important dish of Maharashtrian cuisine. Varan means dal and Bhaat means steamed rice. Here in my husbands house, varan is made as naivedyam in festivals like Satyanarayan puja, Ganesh Festival, or I can tell in almost all the festivals. This is the first basic dish thought to girls when they learn to start cooking. 

Ingredients:
Tuvar Dal 1 cup
Water as needed
Ghee 1 tsp
Jeera / Cumin seeds 1 tsp
Asafoetida 1/2 tsp
Turmeric Powder 1 tsp
Salt as per taste
Freshly chopped coriander leaves

Method:
Wash dal and pressure cook with enough water for around 5 - 6 whistles. 
Once cooled, open and mash with dal masher.

Add 1 cup water, turmeric powder and salt and churn well.

Lets temper and cook the Varan...
In a pan, heat ghee. Once heated, add jeera. As it splutters add asafoetida.

Now add the readied dal, mix well and cook for 2 - 3 minutes.

Garish with freshly chopped coriander leaves.

Serve with Bhaat {steamed rice}.

Note:
Varan is a thick dal, so much water is not added.

There are variations to make varan. Like - green chili / tomato / grated coconut can be added to varan, any of this accordingly.
