Mug Ni Dal Ni Khichdi / Moong Dal Ki Khichdi

Mug Ni Dal Ni Khichdi / Moong Dal Ki Khichdi is a simple khichdi, perfect one pot meal, also perfect during winters. This khichdi is made with a mild tempering and its easily made. I have served with kadhi. 

Ingredients:
Rice, 1 cup
Moong Dal 3/4th cup
Tomato 1, chopped
Turmeric Powder 1 tsp
Red Chili powder 1 tsp
Salt as per taste
Ghee 1 tbsp
Jeera / Cumin seeds 1 tsp
Green Chili 1, slit
Asafoetida 1 tsp
Water 6 to 8 cups
Freshly chopped coriander leaves

Method:

Wash and Soak rice and moong dal in water for 10 - 15 minutes.

In a pressure cooker, heat ghee. Once heated add cumin seeds. As it splutters, add asafoetida, green chili, and tomato and saute for a minute.

Now add soaked rice and moong dal. Mix.

Add 6 to 8 cups of water, as per consistency needed.
{I added 7 cups, as I wanted did not want a thick consistency}.

Now add turmeric powder, red chili powder, salt and mix well. Allow it to simmer for 2 minutes. Then close the cooker and cook for 5 whistles.

Once cooled, open the cooker, mix the khichdi.

Garnish with coriander leaves and serve hot. 
{Khichdi tends to thicken soon as it gets cold, so serve hot}.

Varan Bhaat

Varan Bhaat is a simple but an important dish of Maharashtrian cuisine. Varan means dal and Bhaat means steamed rice. Here in my husbands house, varan is made as naivedyam in festivals like Satyanarayan puja, Ganesh Festival, or I can tell in almost all the festivals. This is the first basic dish thought to girls when they learn to start cooking. 

Ingredients:
Tuvar Dal 1 cup
Water as needed
Ghee 1 tsp
Jeera / Cumin seeds 1 tsp
Asafoetida 1/2 tsp
Turmeric Powder 1 tsp
Salt as per taste
Freshly chopped coriander leaves

Method:
Wash dal and pressure cook with enough water for around 5 - 6 whistles. 
Once cooled, open and mash with dal masher.

Add 1 cup water, turmeric powder and salt and churn well.

Lets temper and cook the Varan...
In a pan, heat ghee. Once heated, add jeera. As it splutters add asafoetida.

Now add the readied dal, mix well and cook for 2 - 3 minutes.

Garish with freshly chopped coriander leaves.

Serve with Bhaat {steamed rice}.

Note:
Varan is a thick dal, so much water is not added.

There are variations to make varan. Like - green chili / tomato / grated coconut can be added to varan, any of this accordingly.

Eggless Choco Almond Pudding


Eggless Choco Almond Pudding is a easy and a simple dessert, with no eggs, no gelatin, but with just basic custard powder .

Actually, I am putting my hands in learning basic desserts and baking recipes, as, mentioned in my previous post, I have got fond of baking and dessert making may be its the seasons effect on me:), This pudding is again from my learning process, having given a second try its actually come out well.{since my round bowl was seen missing suddenly after I prepared the pudding, I had to use my kheer bowl :(, later then I found my round bowl in the last shelf :(, learnt that should be ready with things before hand}. 

Actually, I had this recipe written in my notes, so decided to make it. I have changed a bit of the recipe by adding Nutella and Almond, for that wonderful choco - almondy{Nutty} taste. In my first try it came out well, so again I made the this week for posting it here. Hoping this dessert is liked by you all too. 

Serves 2 medium size glass or 1 small bowl.

Ingredients:
Nutella 2 tbsp
Almonds 6 - 8
Milk 400 ml
Custard Powder 2 tbsp
Cocoa Powder 2 tbsp
Sugar 3 tbsp
Vanilla Essence 1 tsp

Method:
Step 1:
Chop almonds to small pieces.
Take Nutella in a bowl. Add chopped almonds to it and keep aside.

Step 2:
In another bowl, take cocoa powder, custard powder and sugar and mix well.

Now pour 150 ml of milk to it and mix well to form a smooth batter.

Step 3:
In a non stick pan, pour the remaining milk and boil the milk. 
Now add vanilla essence and stir well.
As the milk is boiled once, add the cocoa-custard paste slowly, simultaneously stirring the milk, so that no lumps are formed. 
Keep stirring in slow flame until it thickens. It must take 4 - 5 minutes.
Now add the nutella - almond paste and cook well. Since the paste is sticky, just try-in stirring properly almost for 2 minutes. 

Once done we will get nice chocolaty almondy{Nutty}pudding:) :) 
Transfer it to the serving bowl or glass. 
Garnish by Sprinkling some pieces of Almonds or as per wished.

Refrigerate around for 2 hours and serve chilled.

Eggless Vanilla Sponge Cake in Pressure Cooker

Eggless Vanilla Sponge Cake is a simple cake, which I have baked in the pressure cooker, and its come out very nicely.

Recently, I have developed lot of interest in baking and desserts, but since I dont have an oven here, I try making in the pressure cooker and steamers. This cake too is based on my learning process. I baked this cake earlier and it came out well, so I decided to click pics and bake, and Thank God, again its come out so well. It gives a good boost and confidence, if our try gets success:).
{Though a cake made in an oven is the best, this method is also making me bake a good cake}.

Ingredients:
Maida 1 cup
Baking Powder 1/2 tsp
Baking soda 1/4th tsp
Powdered Sugar 1/4th cup
Salt a pinch
Butter 1/4th cup {at room temperature}
Condensed Milk 1/2 cup
Milk 1/2 cup
Vanilla Essence 2 tsp

For Icing:
Nutella as per needed
Powdered Sugar as per needed

For pressure cooker baking:
Salt, to cover the bottom.

Method:
Step 1:                                               
Take a bowl, add powdered sugar and butter and beat well with a hand whisk. 
Once beaten, add condensed milk and whisk well.                   

Step 2:
Take another bowl, Keep a sieve upon the bowl.  
Add maida, baking powder, baking soda and salt and the sieve well into the bowl, until everything is well mixed.

Step 3:
Now add this maida mixture{step 2} to the butter mixture{step 1} little by little by fold and cut method, including milk too in between little by little, until everything is mixed and a perfect cake batter consistency is reached. 

Now add Vanilla essence and give a good whisk. Our cake batter is ready. 

Step 5:
Grease a cake pan and transfer the cake batter into the greased pan.

Lets Bake the Cake...
Step 6: 
Take the pressure cooker. Add salt on the bottom of the cooker{I call it salt bed}, this is to prevent direct heat to the cake pan. 

Pre-heat the pressure cooker covered for 5 minutes on high flame.
Carefully open the cooker and Place the cake pan into the pressure cooker carefully over the salt bed. The pan should not touch the sides of the cooker.

Close the lid and bake on high flame for 5 minutes, and reduce the flame to low and bake for 20 to 25 minutes. It took 30 minutes for my cake to get baked. 

Insert a skewer and if it comes out clean, the cake is ready. 
Take it out of the cooker, and allow to cool for 5 minutes. 
Now take a plate and invert the pan to the plate by tapping it slowly.

Straighten the cake downside to upside.

For Icing:
Keep the cake on a plate, add nutella and spread it all over.

Take icing sugar in a sieve, and dust it onto to the cake.

Important Note on Pressure Cooker Baking:
Before baking the cake using a pressure cooker, please follow the following steps..
Remove the whistle{vent weight}, gasket {rubber ring}. 
Regular use of pressure cooker for baking is not good, as the metal of the pressure cooker may get damaged.

Bread Pizza

Bread Pizza is a simple yet an tempting snack that can be made for evening snacks and kids will surely enjoy it, as well as elders too will like it. Its a best home made option of pizza and I have made it on the tawa. Though its a 2 in 1 process of toasting and grilling, its easy and simple.

Ingredients:
Bread 2 slices
Onion 1, small
Tomato 1, small
Green Capsicum 1,small
Oregano 1 tsp
Chilli flakes 1 tsp
Salt a pinch
Tomato ketchup, as per liking - for spreading
Mozzarella cheese grated, as per liking

Method:
Finely chop onion, tomato, capsicum and transfer to a bowl. Now add salt, chilli flakes, oregano to the chopped vegetables and mix well.

Lets Toast the bread...
Take the bread, and toast it in the toaster. 

Transfer the bread to a plate. Now spread tomato ketchup over the toasted bread. 

Add the chopped vegetables, all over the bread neatly.

Add grated cheese - as per your wish more or less over it.

Now lets Melt the cheese :) by Grilling it on tawa...
Take a tawa, place both the breads properly and cover with a lid for almost 2 - 3 minutes keeping the flame very slow. We are doing this for getting the pizza effect and also for the cheese to melt, as the bread is already toasted.
{The lid should fit the tawa properly without touching the breads}.

Now our bread pizza is done. Transfer to a serving plate. 

Cut in the centre and enjoy...
